23 Calorie Blueberry Pancake Bites



I bought some fresh blueberries the other day, and today I used them to make some blueberry pancake bites!

These are 23 calories each, gluten free, dairy free, and vegan!

All 9 bites are about 200 calories - so these are a great alternative to regular blueberry pancakes, and they are a great low-sugar breakfast!




Recipe: Makes 9 Bites

3/4 Cup Unsweetened Apple Sauce - 75 calories
1/4 Cup Oat Flour - 90 calories
1 tablespoon Stevia
1/4 teaspoon Baking Soda                      
=165 calories, makes 9 Bites with 18 calories each plus 5 calories for 4 blueberries per Bite=23 cal/Bite



1. Preheat the oven to 350 degrees
2. Mix together the Stevia, Apple Sauce, Flour, and Baking Soda
3. Pour batter into greased mini muffin tin (my muffin tin is a little larger than mini muffins but smaller than regular muffins)
4. Add 4 blueberries to each muffin
5. Bake for about 20 minutes - let cool or enjoy hot, store leftovers in an airtight container

17 Calorie Brownie Bites




Today I had a baaaaad craving for chocolate, so I thought I'd try making some gluten and dairy free skinny Brownie Bites.


These turned out GREAT, super fudgy and chocolate-y, which is how I like my brownies (not cake-y)

These are gluten free, dairy free, and vegan - AND they're only 17 calories per brownie bite

I used a mini muffin pan and cupcake liners to make these but you could use the same batter for regular with a regular size muffin tin, or in a loaf pan, or you could just eat the batter raw since it doesn't have any eggs!




Recipe: Makes about 17 Brownie Bites


1 Cup Pumpkin Puree - 80 cal
1/2 cup Unsweetened Apple Sauce - 50 cal
4 tablespoons Baking Cocoa - 80 cal
1/4 cup Oat Flour - 90 cal
1/4 cup (plus 1/8 cup) Stevia or to taste         
= 300 Calories in Whole recipe, makes 17 Brownie Bites with about 17 calories per Bite



1. Preheat oven to 350 degrees
2. Mix together Pumpkin and Apple Sauce
3. Stir in Cocoa powder until desired chocolate intensity is reached
4. Stir in Stevia until desired sweetness is reached
5. Spoon batter into cupcake liners and place in muffin pan
6. Bake for about 15 minutes
7. Let cool, or enjoy hot from the oven - store in an airtight container

48 Calorie Lemon Poppyseed Muffins




I have had a craving for a Lemon Poppyseed Muffin ever since my sorority sister, who is also gluten free, told me she had been looking everywhere for a gluten free lemon poppyseed muffin. We were able to find slices of gluten free Lemon Poppyseed Bread, but no muffins - so today I decided to try to make some, without oil, sugar, dairy, or gluten!


I thought these turned out GREAT, not overly sweet, very lemon-y, and they had a great fluffy yet dense muffin texture :)







Recipe: (Makes 6 muffins)

1/2 cup Oat Flour - 180 cal
2 egg whites - 34 cal
1/2 cup Unsweetened Apple Sauce - 60 cal
Juice from one lemon (about 1/4 cup) - 12 cal
Lemon Zest (about 1/8 cup)
1 tablespoon poppy seeds
1/4 teaspoon Baking Soda
1/2 cup Stevia                               
=286 calories for whole recipe - makes 6 muffins (48 calories per muffin)

1. Mix together all dry ingredients, preheat oven to 350 degrees
2. Zest the lemon 
3. Juice the lemon in a separate bowl, remove seeds and add juice to the other ingredients
4. Add the rest of the ingredients and stir well
5. Divide batter into cupcake liners in a muffin pan
6. Bake 25-30 minutes, or until toothpick inserted in the center of the muffin comes out clean
7. Let cool, and enjoy!


I made regular muffins but this batter would be great as mini muffins, or baked into a tea loaf!
