20 Calorie Apple Oatmeal Cookies




Fall is in full swing, and clearly I have caught Apple Fever - 
I based these cookies on traditional oatmeal raisin cookies, but instead of raisins I used apple chunks!

These cookies are also lower-calorie than regular cookies because of the oat flour, and they do not have any regular sugar or butter/oil

These are also gluten free, dairy free, and vegan :)



Recipe:
1 tablespoon Oats - 32 calories
2 tablespoons Oat Flour - 44 calories
3 tablespoons Unsweetened Apple Sauce - 19 calories
1/4 of a medium Honeycrisp Apple - 20 calories
1 tablespoon Pumpkin Puree - 5 calories
1 tablespoon Stevia
Cinnamon(to taste)                                                          
= 120 calories total, makes 6 cookies - 20 calories per cookie

1. Preheat oven to 350 degrees
2. Mix together oats, flour, apple sauce, pumpkin, stevia, and about 1 teaspoon cinnamon - refrigerate for 20-30 minutes
3. Wash and cut up apple into small pieces
4. Spoon the batter onto a parchment paper lines cookie sheet - makes 6 cookies
5. Smooth the cookies out, they do not spread while baking - then top with apple pieces and sprinkle cinnamon on top
6. Bake about 10-12 minutes - remove from oven and let cool, store in an airtight container

Spicy Pumpkin Maple Cookies (30 Calories Each!)



If you can't tell by now, I really like spicy food - and my Dad likes it even more than I do. I used to make Molasses Cookies with chili flakes in them that he really liked - so I thought I would try to make a skinny gluten free version of them.

He didn't think these were quite spicy enough - but for normal people I think they will definitely be spicy enough so be careful with the chili flakes!

This recipe only made 5 cookies but you could easily double or triple it!

These cookies are Gluten Free, Dairy Free, Vegan, and only 30 calories each! You could eat all five for about the same number of calories as a typical cookie!



Recipe: Makes 5 Cookies
1/2 cup Pumpkin Puree - 40 calories
1/4 cup Sugar Free Maple Syrup - 20 calories
1/4 cup Oat Flour - 90 calories
1 tablespoon Stevia
2 teaspoons Red Chili Flakes (or to taste)        
= 150 calories in whole recipe - makes 5 cookies, 30 calories per cookie


1. Mix together all ingredients
2. Chill the dough in the fridge for 1 hour
3. Preheat the oven to 350 degrees
4. Drop heaping spoonfuls of batter onto parchment paper lined baking sheet - this is a very sticky batter but it doesn't spread much while baking so smooth out the cookies as best you can by hand before baking
5. Bake about 13-15 minutes
6. Allow cookies to cool before removing from parchment paper so they don't fall apart - they are very soft!
7. Store in the refrigerator in an airtight container

Recommended Products: Nana's Cookie Bars (Gluten Free and Dairy Free)


When I stopped eating Gluten I found that most of the cookie replacements were even higher calorie than regular cookies!

But, when I was in Boulder I found Nana's Cookie Bars at the grocery store and I was hooked! I even brought some home with me in my checked luggage because I wasn't sure if I would be able to find them in Chicago

These are only 130 Calories for a LARGE cookie - these are soft cookies but they have a little crispy-ness added by some puffed rice



My favorite flavor is the Banana, but these also come in Chocolate and Berry varieties -
All flavors are Gluten Free and Dairy Free!
