Miyoko's Vegan Mozz - Life-Changing Vegan Cheese!!

I have been on a bit of a hiatus from posting recipes while I have been focusing on my Skinnee B's products - but I just could not resist writing a post about Miyoko's Vegan Mozz. It is absolutely life-changing and I want to shout it from the rooftop!

This cheese melts, bubbles, stretches - and it's even good cold! This is just insane to me - when I first tried it I was so excited that I would not stop telling my boyfriend about it (even though I know that he couldn't care less about cheese, vegan or otherwise..)

So, you can see my dilemma - I had to share this with SOMEBODY. Thus, my return to the blog life.

Also it is cashew-based so it is also Paleo and Soy Free :)

Sadly, I do not have any photos of the first recipe I made with the Vegan Mozz, because I literally inhaled it. The next time I make it I will take pictures and post the exact recipe - but the gist of it is as follows:

Canyon Bakehouse GF Rosemary Focaccia  - cut in half
Fry up some Chicken Italian Sausage and add Red Sauce (I used Gravy's Arrabbiatta Sauce )
Spread Sauce/Sausage on Focaccia pieces, top with Miyoko's Vegan Mozz
Broil until Mozz is melted, bubbly and delicious :)


I have since used the Vegan Mozz in 3 other dishes(I have pictures of 2 of them)

Baked chicken with Arrabbiata Sauce, Broccoli and Vegan Mozz



& Baked Rigatoni with Arrabbiata Sauce and Vegan Mozz :)



And the third(not pictured) was a Caprese Salad with Avocado and Balsamic :)

Recommended Products: Nana's Cookie Bars (Gluten Free and Dairy Free)


When I stopped eating Gluten I found that most of the cookie replacements were even higher calorie than regular cookies!

But, when I was in Boulder I found Nana's Cookie Bars at the grocery store and I was hooked! I even brought some home with me in my checked luggage because I wasn't sure if I would be able to find them in Chicago

These are only 130 Calories for a LARGE cookie - these are soft cookies but they have a little crispy-ness added by some puffed rice



My favorite flavor is the Banana, but these also come in Chocolate and Berry varieties -
All flavors are Gluten Free and Dairy Free!

Recommended Products: Zero Calorie Gluten Free NOoodles



After going gluten free I initially tried to just avoid pasta, because I didn't eat it very often to begin with and it is pretty high-calorie.

But when I found these zero calorie NoOdles I had to try them out.
They are most similar to a Ramen Noodle, they are long thin and sort of clear like cellophane noodles.




I have been able to find these at Kramer's(my local grocery store) and Tony's Finer Foods in Chicago, but you could probably order them online as well.





You can buy NoOdles plain, or the boxed ones that have already been added to flavored broth. My favorite is the Chicken infused flavor in my Gluten free Ramen

Recommended Products: Wink Frozen Desserts



I have tried a few low-calorie/ dairy-free ice creams and Wink is by far my favorite! I had been wanting to try it for months but it wasn't available in Chicago until this summer - I was able to find it at Tony's Finer Foods, and you can also order it directly from Wink and have it shipped to you.



This ice cream replacement is Vegan, Gluten free, Sugar free, dairy free, soy free, fat free, nut free and egg free! It is made from pea protein and sweetened with Monkfruit.


Wink comes in 5 flavors but I have only been able to try Cake Batter, Cocoa Dough, and Choco Mint - Cake Batter is my favorite so far.



Because this ice cream is so low in calories (only 100 calories in an entire pint!) It is great for Sundaes because it is still a low calorie dessert even with toppings! Some of my favorite toppings are: PB2 Powder, Soy Whipped Cream, Strawberry Jam, Cocoa Powder, Sprinkles, and Cherries.

Recommended Products: Jell-O Sugar Free Pudding Cups



Jello-O Sugar Free products have been popular in my house since they first were produced. When I could still eat lactose I LOVED the sugar free pudding cups, especially the double chocolate :) These are only 60 calories for a decent amount of pudding, and they are delicious.




My Dad still eats these as a dessert, but I can't have them because they contain milk :(
I tried to make a dairy-free version but it was unsuccessful :( The pudding doesn't set up correctly when you use non-dairy milk, but I am going to try to make it with Lactaid and see if that works correctly

Recommended Products: Outshine Fruit Bars


I LOVE ice cream, sorbet, and all of those other frozen sweet treats! These Outshine Bars are my boyfriend's favorite snack/dessert, he really likes the Strawberry and Pineapple flavors. These bars are also pretty low calorie, most are only 60 or 70 calories for a large size bar. They are a great treat or dessert for anyone trying to watch their calorie intake, and you can find them at the regular supermarket(I usually buy them at Jewel Osco in Chicago). They are also Gluten free, dairy free, and vegan!


Recommended Products: Enjoy Life Brand (Allergen free!)

For years I knew I was lactose-intolerant, but I continued to eat dairy because I LOVE it and I had a supplement that I could take to help digest the Lactose. Unfortunately that supplement stopped working for some unknown reason so I had to give up dairy. The dairy product I missed most was CHOCOLATE, which is why I was so excited to find Enjoy Life Brand products at Whole Foods.

Enjoy Life makes allergen free products, their products are free of: wheat, dairy, tree nuts, peanuts, egg, soy, fish and shellfish. I have loved all of the Enjoy Life products I have tried but I especially love the Chocolate Chips and Chocolate Chip Softbaked Cookies because I haven't found very many(if any) other dairy and gluten free pre-made substitutes for these products in particular.





The Chocolate Chips are great for baking, it is so nice to have a dairy free alternative to regular chocolate chips!




I am addicted to these Softbaked Chocolate Chip Cookies! They are sweet and delicious! I have had trouble making low calorie cookies so until I am able to perfect the texture I want I will just have to keep eating these treats!
