165 Calorie Pineapple Upside Down Cake Sundae



My Mom makes Pineapple Upside Down Cake for my birthday every year - so I wanted to make a Sundae version of it as an end-of-summer treat :)

My version is Gluten free, dairy free, soy free, and nut free!





I used Wink Cake Batter ice cream, pineapple topping, and maraschino cherries - this would also be good with whipped cream and fresh pineapple chunks, you could replace the pineapple sundae topping with fresh pineapple to lower the calories as well




Recipe:

1 scoop Cake Batter flavor Wink frozen dessert (25 cal)
2 tablespoons Pinapple Sundae Topping (110 cal)
3 maraschino cherries(30 cal)         
= 165 calories for the whole Sundae

Recommended Products: Wink Frozen Desserts



I have tried a few low-calorie/ dairy-free ice creams and Wink is by far my favorite! I had been wanting to try it for months but it wasn't available in Chicago until this summer - I was able to find it at Tony's Finer Foods, and you can also order it directly from Wink and have it shipped to you.



This ice cream replacement is Vegan, Gluten free, Sugar free, dairy free, soy free, fat free, nut free and egg free! It is made from pea protein and sweetened with Monkfruit.


Wink comes in 5 flavors but I have only been able to try Cake Batter, Cocoa Dough, and Choco Mint - Cake Batter is my favorite so far.



Because this ice cream is so low in calories (only 100 calories in an entire pint!) It is great for Sundaes because it is still a low calorie dessert even with toppings! Some of my favorite toppings are: PB2 Powder, Soy Whipped Cream, Strawberry Jam, Cocoa Powder, Sprinkles, and Cherries.

Vegan 54 Calorie Pumpkin Cream Cheese



Einstein's makes a DELICIOUS Pumpkin Cream Cheese in the Fall, but now that I can't eat dairy, I have to make my own!

For this recipe I used the Daiya vegan cream cheese spread, it is available at Whole Foods - but if you are not lactose intolerant you could use regular or low-fat cream cheese instead! Be sure to store it in the fridge after you mix it up!






Recipe:

1 tub Daiya Plain Cream Cheese
3/4 cup Pumpkin Puree
Pumpkin Pie Spice (to taste)
1/2 cup Stevia



This spread is about 27 calories per tablespoon, or 54 for 2 tablespoons - for comparison, the regular Daiya cream cheese is 90 calories for 2 tablespoons, so this is about half the calories!


I think this spread will taste great on toast, bagels, pumpkin bread, or as Cream Cheese Icing for the Carrot Cake I'm making my Dad :)

Recommended Products: Outshine Fruit Bars


I LOVE ice cream, sorbet, and all of those other frozen sweet treats! These Outshine Bars are my boyfriend's favorite snack/dessert, he really likes the Strawberry and Pineapple flavors. These bars are also pretty low calorie, most are only 60 or 70 calories for a large size bar. They are a great treat or dessert for anyone trying to watch their calorie intake, and you can find them at the regular supermarket(I usually buy them at Jewel Osco in Chicago). They are also Gluten free, dairy free, and vegan!


Recommended Products: Enjoy Life Brand (Allergen free!)

For years I knew I was lactose-intolerant, but I continued to eat dairy because I LOVE it and I had a supplement that I could take to help digest the Lactose. Unfortunately that supplement stopped working for some unknown reason so I had to give up dairy. The dairy product I missed most was CHOCOLATE, which is why I was so excited to find Enjoy Life Brand products at Whole Foods.

Enjoy Life makes allergen free products, their products are free of: wheat, dairy, tree nuts, peanuts, egg, soy, fish and shellfish. I have loved all of the Enjoy Life products I have tried but I especially love the Chocolate Chips and Chocolate Chip Softbaked Cookies because I haven't found very many(if any) other dairy and gluten free pre-made substitutes for these products in particular.





The Chocolate Chips are great for baking, it is so nice to have a dairy free alternative to regular chocolate chips!




I am addicted to these Softbaked Chocolate Chip Cookies! They are sweet and delicious! I have had trouble making low calorie cookies so until I am able to perfect the texture I want I will just have to keep eating these treats!
